<p>It’s nice to know that many of the solutions to our biggest health problems are within our kitchen cupboard. I think most of us realize that the food choices we make impact our health in a very powerful way. Reducing saturated fats reduces our risk for heart disease. Insulin is a chemical produced in your pancreas when you eat carbohydrates or sugar. It signals your body’s cells to open their walls and let these fuels in to be burned. Sugars are derived from everything from grains, to fruit, to…sugar! Any carbohydrate is eventually broken down into simple sugars for your body to use as fuel. The problem arises from the fact that a person in modern times eats many more carbohydrate based foods than we did in the past.
