End of summer gardens sometimes turn out vegetable quantities we’re not equipped to deal with! I’ve seen more cucumbers, peppers, squash and zucchini in the last couple of weeks from friends’ gardens (and have been the thankful recipient of the over-flow) and that’s inspiring this post. Check out Hanna’s Home Remedies with veggies and some of her favorite recipes using them.

Home Remedies with Cucumber

Cucumbers are a delightful vegetable with many medicinal uses. Cucumbers are very good for the skin, especially the complexion. Either eaten or used topically, they cool and heal the skin.

Cucumber satisfies thirst and is a very good diuretic. Cucumber contains a hormone needed by the pancreas for insulin production. Its natural sodium makes stiff joints more limber.

Cucumber juice purifies the lymphatic system, cleans the blood, and relieves jaundice. Drink 4 or 5 cups of freshly pressed cucumber juice for this cleansing process.

Hanna’s Cucumber and Dill Cream

  • 1 cucumber
  • 2 tablespoons oil
  • 1 tablespoon cider vinegar
  • ½ teaspoon granulated kelp
  •  2 green onions, chopped
  • 1 tablespoon honey
  • 1 teaspoon dried or fresh dill
  • 1 small clove garlic, minced
  • Dash of herb salt

Slice cucumber thinly. Blend remaining ingredients together to prepare the marinade and pour over cucumbers. May be stored for several days in the refrigerator and used as desired.

Peppers, especially spicy varieties, are useful for the entire body and have shown success in alleviating depression, chills, rheumatism, and to warm the body. Here are some of Hanna’s remedies with cayenne pepper.

Cayenne benefits the heart and prevents colds and the flu. It improves overall vitality and is not irritating to the system when uncooked.

Cayenne can be rubbed on a toothache and used for swelling and inflammation. When cayenne tincture is rubbed on an arthritic joint and wrapped with flannel cloth overnight, the pain is usually gone in the morning. Learn how to make your own tinctures in this post.

When used as a poultice, cayenne helps draw out impurities imbedded in flesh. It stimulates the nervous system and the digestive system. It is antibacterial and has been found to be helpful for sore throats, laryngitis, hoarseness, and chills.

Cheese Enchiladas

  • 12 mild chiles
  • 8 oz Monterey Jack Cheese, shredded
  • 3 eggs, beaten
  • 1 teaspoon salt
  • corn meal

Broil chilies 4 to 6 minutes, rotating to brown the skin. Once chilies are roasted and skin is blackened, put them into a bowl and cover. Allow the chilies to sweat in the bowl until cool enough to handle. Remove charred skin, cut a slit down one side of the chilies, clean out the seeds, then stuff with cheese. Coat chilies with corn meal, dip in eggs mixed with salt and fry in hot oil for a few minutes. Place on a baking pan.

  • Sauce
  • 1 teaspoon oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 6 cups finely chopped tomatoes
  • 1 jalapeno pepper, minced (optional)
  • ¼ teaspoon cayenne pepper
  • dash of sugar

Brown onion and garlic in oil, add additional ingredients. Simmer for 15 to 25 minutes until thickened and pour over enchiladas. Add shredded cheese (optional) and cook for 25 minutes at 350 degrees.

Hanna didn’t share as many remedies with these vegetables as others but recommended eating them if you’re diabetic and worried with the health of your kidneys and also if you’re concerned with environmental toxins.

While there are a limited amount of home remedies using zucchini and squash, Hanna compiled quite a list of recipes using them. Here’s our favorite:

Raw Zucchini and Red Pepper Salad

  • 2 small unpeeled zucchini
  • 2 tablespoons lemon juice
  • ½ teaspoon soy sauce
  • sprig of rosemary
  • 1 small red bell pepper
  • 1 teaspoon honey
  • ½ clove garlic, minced

Wash and slice the zucchini and red bell pepper into thin slices. Marinate the vegetables in the vinegar, honey, soy sauce, and spices. Drain and arrange on salad greens or eat alone.
